Banana Bread Filled with Caramelised Walnuts & Bananas

You can never go wrong with banana bread, and whoever thinks otherwise, I’d invite you to give this recipe a go and, please do let me know how it turns out - all I can say is that it has only lasted 3 days in my house. Breakfast idea: pair a slice with your cup of tea or coffee, and top it up with some yoghurt or cottage cheese and a drizzle of your favourite nut butter.

Ingredients

  • 1 cup all-purpose flour

  • 1 1/2 cups wholemeal flour

  • 1tbsp baking powder

  • 1tbsp cinnamon

  • 3 ripe bananas

  • 3 Medjool dates

  • 1tbsp honey

  • 2 eggs

  • 2tbsp coconut oil

  • 1/2 cup oat milk (or you milk of choice)

  • handful of chopped walnuts

  • 1tbsp brown sugar

Method

  1. Soak the pitted dates in boiling water for around 10-15 minutes.

  2. Preheat the oven to 180ºC and line a lot pan with parchment paper.

  3. Using a fork, mashed two of the bananas in a medium bowl, add 1tbsp of melted coconut oil, honey and whisked eggs and combine.

  4. Drain the water from the dates and place them in a food processor until you get a paste, incorporate into the egg mixture along with the milk.

  5. In a mixing bowl, sift the flours, baking powder and cinnamon, combine well. Slowly, start adding the wet ingredients and mix everything well using a spatula. Set aside.

  6. Heat a pan with a tbsp of coconut oil, add the brown sugar, sliced banana and walnuts and cook over medium-low heat for around 5 minutes, stir frequently to avoid the banana from sticking to the pan.

  7. Pour half of the batter into the loaf tin, add the caramelised mixture on top and cover with the other half of the mixture.

  8. Bake for 40-45 minutes until a toothpick comes out clean.
