Biscoff Banana Bread
I think by now you most likely know my enthusiasm for banana bread and for trying different versions of this delicious loaf bread.
The sweetness of the bananas, dates and biscoff make this bread so special and highly addictive (in a very good way tho!). A generous slice of banana bread combined with a cup of coffee or tea is all it takes to satisfy my mid morning appetite.
Ingredients
4 dates, soaked
1/3 cup coconut oil, melted
1/2 cup greek yoghurt
2 eggs
1tsp vanilla essence
2 medium-large bananas, mashed
1 cup all purpose flour
1/2 oat flour
2tsp baking powder
2tsp cinnamon
1tsp nutmeg
pinch salt
dollops of biscoff
Method
Soak the dates in hot water for 10 minutes and preheat the oven to 180ºC
In a mixing bowl, whisk the eggs add the melted coconut oil, greek yoghurt, mashed bananas and vanilla
Blend the soaked dates in a food processor until you get a creamy texture and add into the wet mixture
In a large mixing bowl, combine the dry ingredients, sifting the flour, baking powder and spices.
Stir in the wet mixture until you get a smooth batter
Line a loaf tin with parchment paper and spread half the batter into the tin. Add biscoff dollops across the centre of the loaf and cover with the rest of the batter
Bake for 50 minutes* until a toothpick comes out clean. Leave to cool before slicing and enjoy with your favourite drink!
*If it starts to brown cover with some foil for the last 10-15 minutes
