Banana and Coffee Cake Slices

Today I bring another banana-based recipe – yes, I’m obsessed with the flavour and texture this versatile fruit gives to cakes and other baking goods like cookies, pancakes and cupcakes. Bananas do not only have an amazingly sweet flavour but are a great source of energy, fibre and essential micronutrients. They contain minerals such as potassium which helps to maintain balanced levels of sodium (i.e. a component of salt) and ensure optimal water content inside your cells. They’re a great source of carbohydrates which is your body’s preferred energy source along with a good source of fibre which is essential for supporting and building a healthy gut microbiome.

For this recipe, I decided to combine one of my top favourite ingredients and lemme tell you, the flavour was UN RE AL! So if you fancy some of these delicious breakfast or snack cake slices make sure to give this a try and don’t forget to share your thoughts with me.

Ingredients

  • 2 1/2 cups of flour (1 1/2 all-purpose: 1 spelt)

  • 8g baking powder

  • 4 sliced Medjool dates

  • 1 cup chopped walnuts

  • 1 eggs substitutes (add 1 tbsp chia seeds in a small cup and mix with 3 tbsp of water. Leave for 15 mins to thicken)

  • 1 ripe banana

  • 1 1/2 tbsp coconut oil

  • 1/2 cup oat milk (or other nut milk of your choice)

  • 1/2 cup brown sugar

  • 3 tbsp granulated coffee

Method

  1. Preheat the oven to 180ºC.

  2. In a large mixing bowl, add the flour, baking powder and walnuts.

  3. In a small bowl pour the egg substitute, melted coconut oil, brown sugar, mashed banana and nut milk. Combine well and add into the dry mixture.

  4. Add the sliced dates and granulated coffee and combine well (the batter should have a sticky texture).

  5. Line a squared baking tray with parchment paper and pour in the mixture. Bake for around 15 mins or until a toothpick comes out clean.

  6. Let it cool down for 30 mins before cutting into slices.
