Peanut Butter Cakey Cookies
These cookies are a great idea for batch cooking some delicious homemade snacks to have during the week - they will definitely hit the spot if fancying something slightly sweet to go with your cup of coffee or tea. These will satisfy anyone’s taste buds, which like mine, love their cookies crunchy around the sides and soft and cakey around the middle. Oh, and they make the best cookies for dunking in tea, coffee or hot chocolate - a truly satisfying experience during the winter months!
Ingredients
1 egg
1 cup crunchy peanut butter
1tbsp honey
1/2 cup oat milk (or milk of your choice)
1 cup wholemeal flour
2tsp baking powder
1tsp cinnamon
pinch salt
For the topping:
3 dark chocolate squares
1tbsp peanut butter
1tsp coconut oil
Method
Preheat the oven to 180°C
In a small bowl, beat the egg, add the peanut butter and honey, mix well, pour 1/2 the milk to it and reserve
In a bigger bowl, sift the flour and baking powder, add the salt and cinnamon, combine
Add the wet ingredients and stir well, keep adding the remaining of the milk until all ingredients are combined
Make 9-10 balls with the dough and place them on a lined baking tray
Bake for around 13 minutes at 180°C
Meanwhile, prepare you topping by melting the coconut oil with the chocolate squares and adding the peanut butter at the end
Remove cookies from the oven when golden and drizzle with the chocolate topping. Let them cool down completely and enjoy!
