Sea Salt Mocha Cookies
Hello foodies, I hope you are all staying safe and healthy during these days. Today I’m bringing you one of my favourite cookie recipes which I’m sure you will love! If like me, you are a coffee and chocolate lover, you surely don’t want to miss these delicious and gooey cookies. They are perfect for a quick and simple breakfast or mid-afternoon snack to go with your cup of coffee or tea.I hope you try making these and like them as much as I do!
Ingredients
1/2 cup melted dark chocolate
1/3 cup melted coconut oil
1 tbsp cocoa powder
1 chia egg (1 tbsp chia seeds in 3 tbsp water-soaked fro ~15 mins)
2 tbsp granulated coffee
2 tbsp brown sugar
1 tbsp maple syrup
1 tsp sea salt (+ more to add on top)
3/4 spelt or oat flour
1/2 tsp baking powder
Method
Preheat the oven to 180°C
Add the chocolate, coconut oil and cocoa powder into a heated pot and melt
In a bowl, add the chia egg, sugar, maple syrup, granulated coffee and combine well. Add the chocolate mixture
In a separate bowl sift the flour along with the baking powder and salt
Add the wet mixture into the flour mix and combine
Line a baking tray with parchment paper, make spoon-sized balls with the dough and place in the tray. Gently press them down and bake for 12-15 mins
Let them cool down for ~10 mins before removing from the tray
Sprinkle with some sea salt and enjoy!
