Burrata & Cherry Tomatoes Carbonara
As many of you may already know I love an authentic pasta dish any day of the week and so I thought I’d share with you an upgraded version of the very delicious traditional carbonara - absolutely, mouthwatering!
If you have people around the weekend or fancy a cozy dinner date at home, this dish is definitely for you. So here are the details for this Italian inspired meal.
Ingredients
400g dried tagliatelle
3 large eggs
1 cup of grated parmesan cheese
8-10 cherry tomatoes
1/2 cup sliced ibérico ham (or Italian prosciutto)
2 tbsp fresh dill
2 tbsp fresh thyme
1 tbsp olive oil
150g burrata cheese
1 tsp chilli flakes
Salt and pepper
Method
Preheat the oven to 180ºC. Meanwhile, start cooking the pasta according to package instructions (for al dente, approx. 8 minutes). Reserve 1/2 cup of pasta water
Line a baking tray with parchment paper and add the cherry tomatoes, olive oil and fresh herbs. Combine well and bake for 10 minutes. Half way through add the ham until it becomes crispy
In a large bowl, start beating two egg yolks and one whole egg, alongside the parmesan cheese and spices
Add the cooked pasta into the egg mixture, mixing quickly to avoid the eggs from scrambling. Add some of the reserved pasta water to thin the sauce until reaching a smooth and creamy consistency
Serve in a pasta bowl and top with the baked tomatoes, crispy ham and burrata.
Sprinkle some dried oregano for the full Italian experience and enjoy with a nice glass of red wine!
