Roasted Cauliflower with Toasted Almonds

This recipe has been inspired from the cook book “Eat Green” by Melissa Hemsley. It makes a great side dish to add if you have friends over for dinner, or simply as a quick add-in to a meal. The fusion of spices used for seasoning the cauliflower is just amazing! You’ll love it - Quick tip: I’d recommend making a big portion of the spice mix (name: chermoula) so that you can use it in stir fries or for seasoning a delicious winter soup.

Ingredients

  • Cauliflower, sliced (save the leaves!)

  • 1tbsp olive oil

  • Sea salt and pepper

  • 2tsp ground cumin

  • 1tsp ground coriander

  • Chilli flakes

  • 1 cup almonds

  • Optional: balsamic vinegar

Method

  1. Preheat the oven to 180ºC. Sliced the cauliflower head and reserve the leaves

  2. Place the cauliflower slices in an oven tray lined with parchment paper and add 1 tbsp of olive oil, salt and pepper. Roast for 10 minutes. Meanwhile, mix the spices together

  3. Take the cauliflower out of the oven, add the leaves and spice mix. Mix everything well and roast for another 10 minutes. Throw in the almonds to roast for the last 3-4 minutes

  4. Place in a plate and drizzle with some balsamic vinegar and chili flakes

  5. Enjoy and make sure you savor every bite of this unique combination of flavors!
