Salmon & Tahini Pasta

This super simple and flavourful pasta dish makes a great midweek lunch or quick dinner. A nourishing recipe containing a balance of all the essential macronutrients - it will leave you feeling satisfied and fuelled for a few hours.

*Note: this recipe serves 1 portion

Ingredients

  • 1 salmon fillet

  • 1 cup cooked wholewheat penne pasta

  • 1 red onion

  • 2 handfuls kale

  • 1tbsp tahini

  • 1tbsp olive oil

  • 1tsp smoked paprika

  • 1tsp dried oregano

  • salt and pepper

Method

  1. Heat up a saucepan with some salted water and add the pasta. Cook according to package instructions and reserve some of the cooking water.

  2. Heat up 1tbsp of olive oil in a frying pan, add the chopped red onion and cook until it turns translucent, add the salmon fillet and cook for 6-8 minutes. Begin to crumble the salmon, add the kale and spices.

  3. Cook for 5 more minutes and incorporate the pasta, tahini and around 2tbsp of cooking water. Mix everything well and adjust for salt and pepper.
