Vegetable Pancakes

I couldn’t be happier to be back home and have the sun shining every day. All that it takes to fill my soul is some delicious food, the sun shining and being with my loved ones.

I am so excited to share with you this quick and nourishing veggie pancakes. An easy and flavorful meal you can have at any time of day.

Ingredients

  • 1/2 grated courgette

  • 1/2 cup roasted red peppers

  • 1 cup sweet corn

  • 1/2 cup feta cheese

  • 1/2 cup all purpose flour

  • 3 eggs

  • handful fresh fennel

  • handful fresh basil

  • salt and pepper

  • 2tsp olive oil

  • Optional: balsamic glaze and feta to serve

Method

  1. In a mixing bowl, whisk the eggs, add the shredded courgette, roasted peppers, corn, flour, feta, herbs, salt and pepper. Combine well until a batter forms, it shouldn’t be too thick!

  2. Heat up a pan with olive oil. When hot add around 1/2 cup of the batter and cook each side for 2-3 minutes. Repeat the process until the batter has run out.

  3. Serve with a side salad, topped with feta and balsamic glaze and enjoy!

  4. You can double the recipe and store the leftover pancakes inside your fridge!
