Vegan Apple Crumble with Medjool Dates

Apples are now in-season in the UK and I could not think of a better idea than a quick, easy and nourishing apple crumble. This recipe uses a range of high-fibre ingredients which contribute to supporting your gut health as well as, delicious flavours which makes this snack or dessert so satisfying!

Ingredients

For the filling:

  • 4 great British apples, peeled and cubed

  • 3 medjool dates, pitted and sliced

  • juice of 1/2 lemon

  • 1tbsp cinnamon

  • 1tsp nutmeg

  • 1tbsp brown sugar

For the crumble:

  • 1 cup rolled oats

  • 1 cup all-purpose flour

  • 1 tbsp baking powder

  • 1tbsp brown sugar

  • 2tbsp coconut oil, melted

  • 1tsp vanilla essence

  • 1tsp cinnamon

Method

  1. Preheat the oven to 180ºC

  2. In a round or squared oven dish place the apples and combine well with the rest of ingredients for the filling. Set aside

  3. In a separate bowl mix the ingredients for the crumble. Mix in well using your fingertips to get a breadcrumb-like consistency

  4. Spread the crumble on top of the apples and evenly distribute. Bake for 35-40 minutes until the crumble turns golden and apples are soft

  5. Enjoy for dessert with a big dollop of your fave yoghurt or ice-cream!
