Pumpkin & Oats Energy Cookies

These energy cookies are a combination between an energy bar and a cookie. They make a delicious and nourishing midday snack- perfect for that kick of energy to help you power through the rest of your day!

The add-ins are essential in this recipe, as it’s not excessively sweetened and these will provide a unique flavor to your energy cookies. I used chocolate and walnuts as the add-ins, but you can customize the recipe and make these cookies your own by using your favorites such as, pumpkin seeds, shredded coconut, hazelnuts, dried cranberries or raisins.

Ingredients

  • 2 cups rolled oats

  • 1 cup roasted pumpkin, mashed (or pumpkin puree)

  • 2 medjol dates, soaked

  • 1tsp cinnamon

  • 1/2tsp pumpkin spice

  • 1/2tsp vanilla essence

  • 1/2 cup chopped walnuts

  • 1/2 cup chopped dark chocolate (or chocolate chips)

  • 1tbsp honey (or sweetener of choice)

Method

  1. Soak the dates in some boiling water for about 10 minutes and set aside (pitted)

  2. Preheat the oven to 180ºC

  3. Blend the dates, mashed pumpkin, vanilla essence and spices until reaching a smooth consistency

  4. In a large bowl, add the oats, pumpkin mixture, chopped chocolate, honey and walnuts. Combine well making sure you get a thick dough

  5. Using your hands, shape the touch into 10 cookies and place them in an oven rack lined with some parchment paper

  6. Bake for 12-15 minutes and let them cool down for about 15 minutes before getting your hands into these scrumptious cookies. Store them in an airtight container for 4-5 days. You can also freeze them for up to 3 months!
