This winter apple spiced loaf is perfect for a delicious breakfast along with some fruit and yoghurt, for a sweet snack to go with your cup of tea or for a scrumptious dessert which will impress all of your guests this Christmas! This loaf may look very simple yet, it is filled with surprises by combining the most amazing aromatic and fruity flavors, moist, smooth and crunchy textures. Take it to the next levels by topping it up with your favorite ingredients (homemade chocolate glaze, in-season fruit jam, maple syrup, nut butters, coconut flakes…)

Ingredients

  • 1/4 cup coconut oil, melted

  • 1tbsp maple syrup

  • 1/3 cup peanut butter

  • 1tsp vanilla essence

  • 1tsp grated ginger

  • 1/3 cup oat milk

  • 1/2 cup apple sauce (I made my own, find recipe here)

  • 2 cups of flour (1 all-purpose: 1 wholemeal)

  • 2tsp baking powder

  • 1tsp cinnamon

  • 1tsp mixed spice

  • pinch salt

  • 2 medium golden red apples, chopped in small squares

  • handful chopped walnuts

Method

  1. Preheat the oven to 180ºC and grease a loaf tin with some coconut oil

  2. In a bowl, add the coconut oil, maple syrup, peanut butter and vanilla essence, mix well until all ingredients are combined

  3. Add the applesauce into the mixture and stir together. Set aside

  4. In a large mixing bowl, sift the flours, baking powder, salt and spices. Add the applesauce mixture, and begin mixing all ingredients while pouring the milk

  5. Once all ingredients are combined, stir in the apples and walnuts. Pour the batter into the greased tin and bake for 45 minutes at 170ºC. Half way through, cover the loaf with some foil to avoid from over browning the top

  6. Let it cool down completely before removing from the tin and enjoy with your favorite seasonal toppings!
