Smoked Salmon Pizza

As a student, I was always tempted to order pizza after a stressful and draining exam day, however, I had to be mindful of the money I spent. This is a great budget-friendly alternative, and trust me, this pizza has nothing to envy to the ones on deliveroo or ubereats! Ans plus, it takes just 5 minutes to prepare and will be ready in 20.

Ingredients

  • Ready-made made whole grain pizza base

  • 1/2 aubergine, sliced

  • 1 small onion

  • 2 slices smoked salmon

  • 5 small mozzarella balls

  • handful of salad and rocket leaves

  • 1/2 can chopped tomatoes

  • 1tbsp olive oil

  • 2tsp oregano

  • salt and pepper

  • chili flakes for garnishing (optional)

  • balsamic glaze (optional)

Method

  1. Preheat the oven to 180ºC

  2. In a high-speed blender, add the chopped tomatoes, olive oil, oregano, salt and pepper. That’s your fresh tomato sauce to spread on top of your pizza base

  3. Add the sliced vegetables, mozzarella balls and smoked salmon and bake for 15-20 minutes until the edges of the pizza start to golden

  4. Add in the salad and rocket leaves, drizzle with balsamic glaze and garnish with chili flakes
