Aubergine & Sundried Tomatoes Rigatoni
A staple in my house is pasta, it’s such a versatile ingredient and makes up the base of many delicious meals. This recipe has an intense smoky flavor and aroma which will make you feel as if you were in the beautiful Tuscan countryside.
Ingredients
250g rigatoni
1 red onion, finely chopped
3 garlic cloves, minced
1 aubergine, diced
250ml pasata (tomato sauce)
120g sundried tomatoes with oil
150g ricotta cheese
1tbsp smoked paprika
1tsp dried parsley
chili flakes
salt and pepper
Method
Cook the pasta in salted boiling water until al dente. Reserve pasta water
In the meantime, chop the vegetables and heat the sun-dried tomatoes oil in a large frying pan
Add the onion and garlic and cook until the onion turn translucent, approx. 5 minutes. Stir in the aubergine and spices and cook for approx. 7 minutes
Add the pasata and ricotta and cook until the aubergine is tender. Keep adding the reserved pasta water as needed
Serve with some mozzarella cheese and oregano
