Mixed Beans Summer Salad

Summer calls for fresh and juicy foods, this combo will keep you nourished and energized during the warm months. This recipe is so easy and quick to make, it won’t take you more than 15 minutes and plus, it’s a great idea for batch cooking.

Ingredients

  • 6-8 strawberries

  • Handful of baby spinach

  • Handful of rocket

  • 1 big head of broccoli, boiled

  • 6 cherry tomatoes

  • 1/4 red onion

  • 2 celery sticks

  • 1 cup walnuts

  • 1 can mixed beans

  • Half a cucumber

  • 1 tbsp olive oil

  • 2tsp balsamic vinegar

  • salt and pepper

  • Big dollop of hummus (optional)

  • Oregano and feta cheese for garnishing (optional)

Method

  1. Cut the broccoli head into florets and cook it in a pot with boiling water. Let it simmer for 7 minutes until tender and drain well

  2. Chop the strawberries and all the vegetables, except for the rocket and spinach and add into a large mixing bowl, together with the mixed beans (previously drained and rinsed)

  3. Add salt and pepper, the olive oil and balsamic vinegar and combine well. In a serving plate add the walnuts, rocket and spinach and your desired portion of salad.

  4. Garnish with feta cheese and oregano. Keep any leftovers refrigerated for a maximum of 3 days.
